Gluten Free Sour Cherry Banana Pudding

Ingredients:
- 1 cup sour cherry juice
- 1 tablespoon date powder or mulberry powder (for sweetening)
- 1 tablespoon banana flour (for the cherry mixture)
- 1 cup plant-based milk (almond, oat, or coconut milk)
- 1 tablespoon banana flour (for the milk mixture)
- 1 tablespoon honey (for the milk mixture)
- Coconut flakes (optional, for garnish)
1 cup = 250 ml
Preparation:
Cherry Mixture: Heat the sour cherry juice in a saucepan. Add date or mulberry powder for sweetness and mix well. Stir in 1 tablespoon of banana flour and cook while stirring until smooth.
Milk Mixture: In a separate saucepan, heat the plant-based milk. Slowly add 1 tablespoon of banana flour while stirring to prevent lumps. Once cooled, mix in 1 tablespoon of honey (optional).
Assembly: Pour the cherry and milk mixtures into small bowls. Let them cool to room temperature, then refrigerate.
Serving: Garnish with coconut flakes and serve.
